Red and Green Apple Salad with Great Hill Blue Cheese
4 portions

1 red apple

1 green apple

1 endive

½ frisée

½ cup flat parsley

¼ cup toasted walnut

3 oz. Great Hill Blue

4 tbsp. walnut oil

1 tbsp. lemon juice

Salt and freshly ground black pepper to taste

Mix walnut oil and lemon juice together, add salt and pepper to taste

Slice apples very thin

Julienne the endive and clean the frisée lettuce

In a bowl, toss all the ingredients with the dressing and serve
