Twig Farm is a small dairy and cheese making operation run by Emily and Michael Lee. The farm is located in West Cornwall, VT about 10 miles from Middlebury, VT. Michael produces raw-milk cheeses made from the milk of our neighbor's cows. Our cheeses are made by hand and lovingly aged in our cave.
Twig Farm Soft Wheel
Soft Wheel is a washed rind cheese made with a mixture of raw goat and cow milk, aged about 80 days. As the cheese ages, the rinds are washed with a whey brind. The texture of the cheese is semi-soft and the flavor is full. This cheese is made from goat milk from our farm and from Jon Mann's farm, and with cow milk from Joe Severy's farm in Cornwall, Vermont.
