Three Owls Farm is a small, seasonal, grass-based sheep dairy in the heart of Vermont. Inside our farm shop is a viewing window into the cheese-room. We are dedicated to making small quantities of fresh-milk cheese from sheep and cows grazing our Vermont meadow grasses. The taste changes with the grasses and with the season. In our cheeses we try to celebrate the flowing, changing, flux of life using a mix of ancient traditions, modern hygiene, and a close regard to nature. Our cheeses are all made with fresh milk, not pasteurized, and are available seasonally. They are all aged over 60 days as required by regulation.
