On a hill just off Route 2, not far from the New Hampshire border, Dave, Carol and Jennifer Smith and their small staff have been producing fine cheeses made from the freshest milk possible, just minutes after the last cow in their dairy herd is milked. The result is true farmstead cheese!
The Smiths' are famed for their red-waxed, farmstead Gouda, which is available Plain (which tastes anything but), Smoked and flavored with either Cumin, Caraway, Garlic or Sundried Tomato and Basil. Smith's also makes Medium and Sharp Cheddar as well as seven varieties of cheese spread which come in 8-ounce containers. The flavors are: Caraway, Wine, Bacon, Herb, Garlic, Horseradish and Hot Pepper.
The Smiths' farm was originally part of Hospital Cottage Farm, a church camp for underprivileged Boston children. Today, on 43 acres, they tend a herd of over 200 milking Holsteins. There is a store on the premises, and cheese as well as gift baskets can be mail ordered. You can find Smith's Country Cheeses in many supermarkets, specialty stores and farmers markets.
