The Knight Family has been farming in Westbrook, Maine since the 1700's. Today they produce a full line of dairy products with milk from their herd of 50 registered Holsteins. Their handcrafted cheeses include fresh cheddar curd, pasta filata style cheese twists and other old world varieties. All their cheeses are made on the premises from small batches of their own milk. They are true farmstead cheeses, each batch unique and reflecting the character and flavor of the land.
