Silvery Moon Creamery is currently crafting more than twelve varieties of quality artisanal cheeses. We received three 2nd place awards at the American Cheese Society's 2004 Competition and have received accolades in the NYTimes, Food and Wine Magazine, O Magazine and Travel and Leisure.

All of our cheeses are handcrafted in small batches right at the farm. We do not use chemical fertilizers or growth hormones and the farm's 50 registered Holsteins are out on pasture seven months of the year and enjoy hay that we grow ourselves. The Knight family has been farming the same land since the 1700's and continues to practice agriculture in a way that is safe for you and your family, our animals, our employees and the environment.

Fresh Cheddar Curd - This is a fresh mild cheese. In June 2007 it was featured at La Kermesse on the French favorite, Poutin (french fries and curd topped with gravy). This cheese is very popular with children. Cheddar curd is great for snacking as is. It also melts well, and is delicious heated on crusty bread with marinara sauce or diced tomatoes.

Tuscan Herbed Curd - Fresh cheddar curd marinated in extra virgin olive oil with parsley, red pepper and garlic from Urban Spice. This curd is great with pizza, salad and rustic bread!

French Herbed Curd - Fresh cheddar curd marinated in extra virgin olive oil with chives, parsley, basil, tarragon, rosemary and marjoram from Urban Spice. A great addition to any kind of pasta.

Rosemary's Waltz - This cheese has a fresh tart taste, and is coated in organic rosemary and a scattering of juniper berries. A nice slicing cheese, or it can be crumbled like a feta.

Tally Ho Plain or with Peppercorn or Dill - Smooth and creamy with an open texture. This cheese is a bit like Havarti. The peppercorn lends a burst of flavor.

Creme Fraiche - A smooth cultured cream that can be spooned over fresh fruit or used to make a savory sauce. A great companion for caviar or smoked salmon.

Westbrook White - A fresh cheese with a light lemony taste, similar to feta or chevre crottin but made with cow's milk. Attractively packaged with a bay leaf.

R&R Farmhouse Cheddar - With age comes good taste. Our version of a traditional farmstead cheddar. Has been aged at least six months. A nice medium cheddar. New in 2007 our clothbound version of R&R Cheddar!

Camembert and Brie - These cheeses have a luxurious white bloomy rind and a soft creamy interior. Splendid as a table cheese with crackers and fruit.

Probiotic Yogurt - Made with whole unhomogenized milk this thick, tart yogurt has a layer of cultured cream on top. Delightful with a drizzle of Maine honey.

Fresh Mozzarella - Made in the traditional way with culture and enzymes, then handstretched and shaped into balls. During the warmer months available packed in water. During the colder months available smoked with applewood.
