Sankow's Beaver Brook Farm is a 175 acre sheep and cow farm located in the Pleasant Valley section of Lyme, CT, the Farm is home to more than 600 sheep, cows, a wool shop and farm market.

Their herd of Jersey cows produces milk for their farmstead cheeses, including Pleasant Cow Cheese, an aged raw milk cheese with a smooth mild flavor and creamy texture; Nehantic Abby Cheese, aged six months or more, with a dry, sharp flavor; Camembert, a pastuerized creamy cheese with a mild mushroom flavor; Feta Cheese, a pastuerized cheese soaked in a traditional brine giving it a creamy, yet racy flavor.
