Located on the shores of Buzzard's Bay, fifty miles south of Boston, Great Hill Dairy in Marion, Massachusetts has been known for its outstanding herd of Guernsey cows. Owner Tim Stone is now introducing a unique tasting blue cheese made in his turn-of-the-century barn. Great Hill Blue is an internally ripened variety made with raw, unhomogenized milk resulting in a true gourmet quality cheese. The cheese has a slightly more dense and yellow curd as no bleach or food colorings are added, and is aged 8 to 10 months. Ask for Great Hill Blue in your favorite gourmet store or specialty shop. If you cannot find it, please let Great Hill Dairy know. They offer cut wedges or wheels for mail-order and can provide interesting recipes as well. Visitors are also welcome to visit the plant most weekdays. |
