Cheesemaking began at Cobb Hill in December, 2000 and have operated year round since then.

Cobb Hill Cheese is made with raw whole milk from the farm's small herd of grass fed Jersey cows. We farm without chemical fertilizers, feeds or additives. We produce two kinds of cheese, Ascutney Mountain (an alpine cheese) and Four Corners Caerphilly using vegetable rennet.

Ascutney Mountain
A sweet and nutty cheese similar to European Alpine cheeses like Gruyere, Appenzeller, or Comte, Ascutney Mountain has a firm texture, with small eyes (holes) scattered throughout the interior. A pleasant bite enhances the flavor, balancing the buttery rich Jersey cow milk. Excellent served with crackers or bread, it also melts and grates well.

Four Corner Caerphilly
Like its Welsh namesake, Four Corners is a natural rind cheddar with a slightly crumbly texture and strong, tangy flavor. We like Four Corners' unique flavor in simple dishes like grilled sandwiches, homemade pizza, or macaroni and cheese. It is elegant on a dessert plate with fruit.
