Calabro Cheese Corporation was founded in September 1953 by Joseph Calabro in Bridgeport, Connecticut. Mr. Calabro was born in Sicily, Italy in 1922. Today, Calabro Cheese Corporation is still a family owned and operated Italian Cheese company with Mr. Calabro as president and CEO. Calabro specializes in producing the following Italian cheeses: Ricotta, Mozzarella, Grated Parmesan, Romano, and a line of select specialty cheeses.

Calabro Cheese was the first Italian cheese company to develop fat-free ricotta cheese with absolutely no fat, no salt, and no preservatives added. In 1995, Calabro added a fat-free mozzarella cube and fat-free shredded mozzarella to its product line.  These cheeses are targeted at a nutrition conscious population and for any individual who wishes to adhere to a fat restricted diet. Calabro is manufacturing Certified Organic Ricotta, Fior di latte, and Mozzarella. They are NOFA certified.

Calabro Cheese has won numerous awards for a number of their cheeses. One prestigious award was in the U.S. Championship Cheese Contest, sponsored by the Wisconsin Cheesmaker's Association, for the Calabro Old Fashioned, Hand Dipped Whole Milk Ricotta( see Ricotta). Their ricotta is the first one to ever receive this honor in the history of the competition.

Calabro distributes its manufactured products to stores in Connecticut, Massachusetts, Rhode Island, New York, New Jersey, Southeast Pennsylvania, the Pacific Northwest, Colorado, Arizona, New Mexico, Texas, Minnesota, Ohio, Georgia, Illinois, Florida, Vermont, New Hampshire, Maryland and Bermuda.
