John Mariani, famed culinary author and food editor of The Wine Spectator, provided the wine pairings for these New England cheeses. A new trend in culinary circles is pairing beer and cheese. The brewmasters at Harpoon Brewery, a local craft brewery in Boston, MA, provided the beer pairings. Other accompaniments are from the cheesemakers themselves.
